We (that’s Harry and Simona), met while Simona was studying her Degree in Cultural and Linguistic Mediation at Rome's La Sapienza University, and I was managing some crazily busy restaurants in London’s West End (including Inn The Park, The National Dining Rooms and Keepers House for Peyton and Byrne). We love cooking and creating recipes and have now settled in Canterbury with our young family.
Simona is from Foglianise, a small village in Benevento Province, an hour away from Naples in Campania, Italy. Her family are artisan producers of pasta, the most amazing tomato sauce, and lots of other gorgeous foodie goodies. Simona's mamma Maria is a wonderful cook, and mum (and now Nonna!). And then there is Maria's mum - Nonna Carmela, who inspires us all with her life and love and knowledge. Their meticulous attention to detail helps us with our work, our recipes and our methods.
The idea of Bottega Caruso is to share the foods and recipes from Simona's village, and bring the best from Foglianise and Campania and mix it with all that we have here in Kent. We make fresh pasta, tomato sauce and other Italian treats and sell it from our shop inside The Old Kent Market on Margate's sea front. We run pasta-making classes and host Supper Club evenings.
Our new shop and kitchen will open in Margate late February 2017.
